- BBQ Rub - Ground down nibs can be used in a BBQ rub to bring depth of flavor.
- Fish - Nibs also add a surprise complexity of flavor and texture to a salmon filet. Place a single layer of cacao nibs on the top of a salmon filet then lightly roast the fish until done. For service place a healthy portion of caramelized onions on top of the filet. Sauce the top of the onions and fish with a beurre-rouge sauce (red wine and butter sauce). The tang from the beurre-rouge sauce combined with the sweetness of the caramelized onions, layered with the crunch and bitterness of the cacao nibs creates and unique flavor profile when paired with the salmon.
